This place supplies fish to many hotels in Hakone and has great stuff. We get fish for sashimi all the time. They prepare it for you if you ask (Aji no tataki is great!) Scallops (hotate)! Maguro! Easy to shop here as all you do is point at what you want! Usually great selection. Closed on Saturdays and Sundays.
