Chef Noah Schwartz is a native Long Islander and New England Culinary Institute alumnus. Noah began his culinary career in Sonoma, working in some of California wine country’s premier restaurants. There, he met his future wife, Sunita. A restaurateur herself, Sunita Schwartz studied under one of the best winemakers in the Sonoma region, quickly becoming a respected wine expert. In 2010, the couple opened "Noah's" in Greenport, a small plates focused restaurant with a commitment to sustainability, seasonality, and locally sourced ingredients. For over a decade, Chef Noah Schwartz and his wife, Sunita Schwartz, have served visitors to the North Fork of Long Island “farm to fork” fare sourced from local farmers and fisherman. Noah’s deep and lasting relationships with local producers have yielded an award-winning approach to dining on the East End. The Schwartzes visit local farms, docks, fish markets and specialty producers to select the freshest produce, cheeses, meats, poultry and seafood to serve. Sunita, a certified sommelier, ensures that the ever-rotating seasonal menu pairs well with wines sourced both locally within Long Island’s famous wine country, and abroad. Since opening a decade ago, Noah has consistently been recognized for his creative approach to sustainability, farm to table dining, and his support of agrotourism, local farmers, and organic/biodynamic farming. He has been recognized by the James Beard Foundation, Best Chefs in America, Dan's Best of the Best, and currently serves the community as a partner with Slow Foods East End.

It was a quiet and early morning and the only company were the deer grazing down the beach. As the sun rose over the eastern bank, colors of pink, orange and purple painted the sky. It was like a Bob Ross painting come to life. McCabe’s Beach in Southold, located off North Sea Drive, overlooks the sound. That morning the only noises were the gentle lapping of the waves and a light breeze. Spend one minute with us there.

Wickham's Fruit Farm is located on 28700 Main Road, PO Box 928, in Cutchogue, Long Island, about 90 miles east of New York City. Wickham's fruit is grown on some of the oldest continually cultivated land in the country, much of the farm dating from 1661. Wickham's Fruit Farm is an historic, bicentennial farm, beautiful to behold against the sparkling waters of Peconic Bay. It is one of the largest farms on the North Fork, approximately 300 acres, of which 200 acres are in fruit, all of which is retailed at the farm. The emphasis is on fruit of the highest quality, and all fruit sold is guaranteed. A very large proportion of Wickham farm land has been placed in Suffolk County's Farmland Preservation program, which means that for generations to come, this land is "forever agriculture." Wickham's Fruit Farm is a family enterprise which has taken pride in producing and marketing the choicest of fruit. The retail market is open usually from May through December from Monday through Saturday. Wickham's is closed on Sundays, Thanksgiving Day, and Christmas. To read the Patch story on Wickham's please go to: http://patch.com/new-york/northfork/wickhams-fruit-farm-beloved-family-business-generations-looks-future-holds-deep Schools and educational groups can schedule a tour on weekdays (Monday through Friday) to visit the farm and pick fruit in season, enjoy the scenic beauty of a farm on the water, observe a live working beehive, and when possible, observe our old historic cider press. Because we are extremely busy with U-Pick activities on Saturdays, there are no scheduled tours on Saturday, but often we have wagon rides on Saturdays to take people to and from the orchards. For U-Pick, families may pick their own strawberries, raspberries, cherries, blueberries, apples, peaches and occasionally other crops such as pumpkins.

In 2003, Karen and Michael Catapano, a nurse and doctor, respectively, bought a small goat farm in Mattituck. During their second year as goat farmers, they entered the American Cheese Society Annual National Competition and came in first place. Popularity ensued, and in 2005, they moved to the current farm’s location in Peconic, increasing their herd to about 100. In 2020, after 17 years of goat bliss, the Catapanos decided to retire and sold the farm to Erin and Connor Burke. The Burkes are keeping the Catapano name and the wonderful Catapano cheese and skincare products.

On Food… We feel strongly about the role that food should play in our society. For us, food and the meals we share bring us together as families and as communities. We look to produce high quality and nutritious food for our customers while also giving them an understanding of how it was grown, and how an animal was raised. On Animals… It is important to us that animals live in an environment that is natural to their species. Animals should eat what their bodies were developed to process. Sheep, as a ruminant, should eat grass and be able to graze freely on pasture. Pigs should be able to root around to find other sources of protein and energy. Chickens should be free to roam on pasture and scratch around to find bugs and other food. Allowing our animals to exist in a way that nature intended is at the forefront of our farm operation. We care deeply to provide this for all of our animals and feel that a happier animal results in healthier food. On Life… Through our farming venture, we aim to live life more simply, to cherish the moments we have, and enjoy them with people we care about. We also want to work towards something we believe will make a difference for us, our family, and others. It has been very rewarding to work on something as real as farming and producing food.

Tell us about your first impressions when you arrived. Bring your fisherman’s sweater—and maybe a pipe?—to this nautical oyster hideout by the docks. Tiny, popular, and fun, with a big sign reading “BAIT / Tackle” over its awning, this place is as seafaring as an Annie Proulx novel—all blue and white in winter, and blue and gold in summer. What was the crowd like? Heads swivel when new folks walk in. Diners are locals in the off-season, tourists and locals in the peak season, and most are cursing while happily struggling with their oyster knives. (This place is known for its slogan: “Shuck Your Self.”) What should we be drinking? If you’re here from The City, the wine prices by the bottle might make you a little weak-kneed for a minute. Pull yourself together and order a classic oyster pairing: Muscadet, Champagne, or—yes, it works—chocolatey Oyster Stout from Greenport Brewing. Main event: the food. Give us the lowdown—especially what not to miss. New Englanders and anyone else who grew up shucking their own oysters will delight that it’s half-price here ($20 versus $36 for a pre-shucked dozen) if you do so. If you don’t know where to start, someone will teach you. Oysters here are divine, since this restaurant is part of a local collective working with dozens of individual farmers and harvesters. Look for littleneck clams, and if you’re not feeling the raw vibe, order the crab roll (available only during summer) with kewpie mayo or whatever chowder is on offer. (If you’re lucky, it’s the smoked scallop, and it rules.) And how did the front-of-house folks treat you? Service is sparkly-eyed and charming. Who should we bring with us? Bring your bananas-for-bivalves buddy, your seafood snob friend who doesn’t mind a chill, wood-and-rafters sort of vibe, or your partner. This is an extraordinary date place.

he North Fork is known for its independently owned vineyards, breweries and distilleries, but there’s a small-batch beverage you might be overlooking: milk. Ty Llwyd Farm in Riverhead is the North Fork’s only producer of raw, unpasteurized milk — known for its creamier taste and added health benefits. And like other local craft beverages, it’s got a loyal, almost cult-like following. The name Ty Llwyd is Welsh for “brown house” and if pronouncing it is challenging (it’s Tee-Clewed), good luck Googling it without knowing the spelling, or spotting the unassuming sign while driving west on Sound Avenue, without having to turn around. But to East End raw milk aficionados, this all makes it almost like a secret club. With a healthy kick. Compared to pasteurized milk that’s heated upon production, raw milk from grass-fed cows is higher in healthy enzymes, Omega-3 fatty acids, vitamins and minerals, and even reduces asthma and allergies. Plus, you’ll never find milk this fresh in a supermarket. New York State law stipulates that farmers sell raw milk within one day of bottling it (but it’ll keep in your fridge for up to two weeks), so it’s pretty much straight from the cow. Raw milk is inspected regularly for pathogens, and any unsold milk on the farm is disposed of at the end of each day.

he North Fork is known for its independently owned vineyards, breweries and distilleries, but there’s a small-batch beverage you might be overlooking: milk. Justin Aronoff was just a teenager when he learned the butcher trade. Now, seven years after opening his own shop in Nassau County, the proprietor of Center Cut Meats will be practicing his craft on the North Fork. The popular Roslyn Heights butcher shop is opening a second location in Mattituck this spring. “It just really seemed like there was an opening for what we do out there,” the Dix Hills resident said. “There are a lot of people going out there these days and we love the location.” The shop will be located at the former North Fork Deli site on Main Road in the hamlet, just east of Mattituck Plaza. The deli closed last year after more than a decade at that location. At just 19 years old, Mr. Aronoff opened the first Center Cut Meats in 2014 after the butcher shop where he previously worked — and another nearby — closed. They quickly gained a following for their fresh cut meats, prepared foods, carry-out items, catering and delivery across Long Island. “We’ve really built a name in the neighborhood,” he said of Roslyn Heights, which will remain open. “We bend over backwards for our clientele and they know what they’re getting from us.”

It began when co-founders John Liegey and Rich Vanderburgh met in college. They bonded, as most guys do, over some pretty awful beer. But their friendship and palates grew as better beer wound up in their glasses. After school they pursued separate careers; John in advertising and Rich as an attorney. Though their career paths diverged they remained close continuing to share their mutual love for beer. The notion that they would someday open their own brewery also remained. Both men have roots in the North Fork. It’s where John’s family spent their summers and where Rich met his wife, Ann, while helping renovate a Liegey home. The expansive fields and working farms, the sun-dappled vineyards, the farm-to-table culture and genuine, laid-back vibe appealed to them. The North Fork is where the brewery needed to be and when the old firehouse in Greenport Village became available they took their shot. In pursuit of this singular dream, weekends, holidays and vacations were spent renovating this dilapidated firehouse while still maintaining their full-time jobs. On July 12th, 2009, a brewery was born. View fullsize Screen Shot 2020-11-09 at 1.27.35 PM.png As the beer grew in popularity the guys knew they had to commit fully. Suits were abandoned for work shirts as they left stable, lucrative careers. Over the years, Greenport Harbor Brewery’s popularity has grown leading to its expansion across two tasting room locations, a restaurant, and distribution across New York, Connecticut and New Jersey. It continues to be rooted in the philosophy of constant improvement and a commitment to excellence, still producing every drop of its beer in their two breweries on the North Fork of Long Island.

Mattebella Vineyards is a small family farm, located in the State of New York’s oldest town, Southold (established in 1640), on the eastern end of Long Island. Our single vineyard is a gently sloping 22 acre parcel of land located on the Main Road (Route 25 on the North Fork of Long Island). Our vineyard has predominantly European clones of grape varietals, tight spacing (6×3), and low vigor rootstock. The crafting of our wines begins in the Vineyard. At Mattebella Vineyards we do things the old fashion way, by hand. We do not use mechanical harvesters or leaf removal equipment. Fine wines are difficult to make consistently if mechanized harvesters and other machines are introduced into the process. Machines simply cannot execute our commitment to quality and make the decisions we consistently must make throughout the growing season. Our hand crafting includes fruit thinning to ensure even ripening and higher quality concentrated juice, leaf pulling, weed removal, pruning, canopy management and, importantly, hand harvesting of all our fruit. Mattebella Vineyards is committed to using sustainable viticulturural practices, while incorporating as many organic practices as possible into our farming methods. We seek to find new solutions to old problems by maximizing the health of the vineyard. In committing to a healthy, responsible approach, we hope to make a footprint in your memory but not on the environment.

We have been growing and selling grapes on Long Island’s North Fork since the mid 1990s in the hamlet of Cutchogue, where we have our family home. Russ McCall planted our first vineyard knowing he would wait until the vines were mature and time was right to release his first wines. He wasn’t interested in putting our family name on a bottle unless it was worthy. 2007 was the vintage we found to be our jumping off point. Since then we have followed a model of winemaking focused on getting consistent results. Quality begins with farming. Our sustainable, low-yield vineyard practices allow our winemaker to work with only the finest grapes, the foundation of any distinguished wine.

A maritime climate tempered by two bodies of water, the Long Island Sound and the Atlantic Ocean, provides long, warm summers with cooling breezes and moderate rainfall. Unique glacial soils of sandy loam provide excellent drainage. Carefully selected clones of Pinot Noir, Pinot Meunier, and Chardonnay comprise all three vineyard sites. Grapes are hand tended and hand harvested by a vineyard crew overseen by North Fork Veteran Steve Mudd
