This menu is the mirror of my journey. It celebrates Romanità (the Roman soul), raw and tasty, refined by the technical rigor learned in France and punctuated by traveling flavors. The local anchorage is total, using exclusively products from the Bayonne market halls and producers from the Basque Country and the Landes.
