What you'll do

The experience begins after meeting in my café, “d:matcha Café & Picnic"

First, I will explain about the tea overall.
Just like wine grapes, there are many varieties of tea trees. Any given variety can be used to make black tea, green tea, and oolong. However, each variety imparts different flavors into its teas.

The first tasting will be sencha that we grow and process in Wazuka Kyoto. The taste differences between the varieties are quite apparent when tasted side-by-side. I will explain how to brew the tea at home as you discovered your preferred variety.

Following the sencha tasting, you’ll be able to hand-grind matcha on our stone mill and learn how to make matcha by using a bamboo tea whisk and matcha bowl. Then we’ll taste three different varieties of matcha. Just like our sencha, we grow and process all our matcha locally.

Your guide through the whole experience will be Daiki, Chisei, or Natsuki.
Chisei is Daiki's younger brother and one of d:matcha’s tea farmers. In the harvesting season, he is mainly in the tea fields, leading our farming team. He has a deep knowledge of tea farming and production.
Natsuki is one of the members of the d:matcha team. She’s been working for d:matcha for more than a year and has trained in both tea ceremonies and production.

I am an agronomist and a Japanese Tea Instructor who used to work in the corporate world. After quitting my job and finishing grad school, I followed my passion for green tea and its cultural heritage, and founded a green tea company, which I run with my wife, brother and our extended family. I very much enjoy helping travelers from all over the world to discover the lasting tradition of Japanese green tea, while exploring the beautiful lands of Wazuka, its mountains, woods, rivers and awe-inspiring tea plantations. Let me show you the tea farms and how we produce and enjoy the finest grades of green tea.

I had an amazing time at this experience. Not only did I learn a lot about sencha and matcha, the host patiently answered my questions about japanese culture. This was definitely a highlight of my trip. All teas I tasted were delicious. Thank you so much!

I went to Japan 3 years ago and had real matcha for the first time. I fell in love. For my 2nd trip to Japan, I wanted to learn more about the dfferent kinds of matcha and how to make it. This class provided all this AND we got to grind the matcha leaves into powder that we later drank. Super unique and cool experience. I highly recommend this class!

Four of us thoroughly enjoyed this matcha workshop! We learned so much about growing, processing and tasting tea. This is a wonderful way to gain an unexpected insight into Japanese culture. The d:matcha space is beautiful and just a very short walk from a great lunch spot (in a book shop?) and a popular mochi shop. Loved it.
