What you'll do

Your experience here at Apple Pond will begin with introductions from myself and all who have gathered. We'll talk history, about the farm and about the matter of the day - CHEESE!

Next, you will meet the ladies who make it all possible, our lovely milking does. We will do a milking demonstration and you'll have the chance to to try your hand at this ancient practice.

After you've had your fun with the animals, we will gather in the summer kitchen for a how-to on ricotta. You will be amazed at how simple and satisfying this cheese is to make. Depending on the day, I may also have feta or chevre, in its final stages, which I talk to you about, if you want to make a more involved cheese at home.

Lastly... TASTE TASTE TASTE! In addition to the ricotta we've made, you will get to try other local cheeses. Each guest will take home a container of the ricotta they've made.

Hello! I'm Sonja. For more than 40 years, my partner and I have been organic farmers here at Apple Pond Farm. We've done many things over the years: bred draft horses, sheep and goats; grown vegetables; made hay; and trained more than 100 young people through our farm apprentice programs.

Making cheese is one of my greatest pleasures. For the milk, we have a small herd of diary goats, whom we milk daily. (Farm fresh!) I love making soft cheeses to stock my refrigerator - ricotta, fromage blanc, and feta. For 4 years, I've been hosting a cheese making workshop called "A Lotta Riccota," so others can learn the joy of cheese making. It's so easy to do in your own kitchen. (No, you don't need your own goats, although we can talk about that...)

More tips

Our driveway is unpaved and can be muddy. We have two very friendly dogs, who will likely greet you when you arrive. We have house cats, but you are unlikely to see them. Bring your cameral for pictures with the animals. Bring a hat, as we will be spending some time outside.

What to bring

We do advise you wear footwear that's appropriate for a farm. (Animals can sometimes step on your feet and humans can sometimes step in poop.)
