What you'll do

The first step will be to show you the ingredients that you can find in all Oaxacan homes, one of the advantages of our experience is that we have a garden with herbs and organic chilis.
Because the best way to learn is by tasting, we will offer a snack that will include chicharron, cheese, quesillo, chapulines, and a mezcalito.
Have you heard anything about the metate and how tortillas are made by hand? Here we will explain to you step by step and best of all you will have the opportunity to make them yourself.
One of my specialties is salsas made in a molcajete and they will be perfect to accompany a delicious Oaxacan parrillada that includes tasajo, cecina enchilada, chorizo, grilled water chilis, memelitas, fresh beans and a lot of guacamole. The mole is the emblem of our cuisine and we will make one of the 7 Oaxacan moles.
You can choose a dessert like arroz con leche, flan or lechecilla. Not forgetting fresh fruit water made with seasonal fruit. Everyone will participate in the different processes, cutting ingredients from the garden, making sauces and of course eating. Remember, when you visit a house in Oaxaca you have to come with an empty stomach.

My name is Sonia and since I was a child I had a great passion for traditional Oaxacan cuisine, and not only because I was born in this beautiful land, but also because I am very proud to have learned from the best cooks in the region.
My mother always told me that the only way to cook is in clay pots and on charcoal, since then I have followed her advice.
I have attained baking diplomas and I make cakes with organic eggs and fresh butter.

Where you'll be

Our class will be taught at our house located in a small traditional town 25 minutes from the city of Oaxaca, a very quiet place away from the noise of the city.
Our family makes the best Oaxacan cheese in the world and you will have to come and judge for yourself. Our house has an organic garden and all the food will be prepared in braceros with charcoal and clay pots

Sonia's cooking class was amazing! Her whole family was super nice and her farm house was so quaint and peaceful. They provide a full explanation of all the foods including sampling all of the mezcal and cheeses they make, followed by an interactive cooking session where you will make salsa, tortillas, tetelas, tlayudas, and mole! You sit around the dinner table and eat the dishes everyone made, finishing up with an amazing dessert and hot chocolate or coffee. We met an amazing group of people and are so happy we ended our trip with this activity! So so worth it!

If you have just one day, spend it here. You'll feel like part of a Oaxacan family that's keen to immerse you in their traditional cooking methods. The reception is warm and kind, the location is captivating, and the food is beautiful (and of course delicious). You'll try different ingredients (some adventurous ones, too, including insects) and mezcals then delve into the prepations. I would not trade this day for any other -- what a unique and memorable experience.
