What you'll do
I'll teach you how to cook a Vegan Japanese Shoujin course using organic and small-batch, natural farmed ingredients. I'll demonstrate that vegan dishes can be healthy, flavorful and filling. I'll introduce you to my favorite Japanese vegan artisanal ingredients like shouyu and mirin. We'll talk about the traditional Japanese farmers and the importance of protecting their methods. After cooking, we'll eat the course and you can take the printed recipes with you.
I'm a nutritionist that has worked as chef in vegan restaurants in Japan and taught cooking classes in Toronto and Tokyo for years. I support natural farming: a ecological farming method that doesn't use chemicals, pesticides or prepared fertilizer. I believe we have the responsibility to preserve the environment for future generations. I promote artisanal Japanese ingredients of high quality. -Nominated for the Japanese vegetarian award in 2018 and 2019. -Introduced naturally farmed vegan sushi at the Fancy Food Show in San Francisco. -Magazine "Shizen Saibai" featured my vegan sushi.

Where you'll be
I will conduct our cooking class in my cooking studio in Kanazawa, Ishikawa. It's easily accessible by bus from Kanazawa station. Also It takes 10 min on foot from Kanazawa station and near Omicho Market.
