What you'll do

Mole is a dark sauce that has 20+ ingredients, I´m gonna tell yo the story about this traditional family recipe, and the changes than you can find in the different moles around Mexico.
We start with a traditional Agua fresca, and then we gonna make our own mole, and we will enjoyed at the end, with chicken, rice and beans.

The class was unique and a once-in-a-lifetime experience. Carla was very attentive, detail oriented, and talkative. She made us feel comfortable with her knowledge and experience. It was a very fun activity and we would love to do it again!

Cooking mole with Claudia this morning was such a rewarding and meaningful experience. While I am 100% Mexicana, I have always been wary of making mole from scratch because it can be a very lengthy process; however, Claudia facilitated a much easier method that transformed chiles, tomatoes, spices and nuts in a mole as delicious and authentic as my childhood's but much simpler to make. Afterwards, we sat at the table to enjoy pollo, arroz verde, tortillas and frijoles that Claudia had ready to accompany our mole. I truly felt among friends and highly recommend this class to you :)

I made Mole with Carla on a Sunday afternoon on my last day in Chicago. I grew up with my aunt making mole for my family but never had the opportunity to learn her recipe. Making mole with Carla was a comforting and educational experience. Mole can seem a bit daunting due to the many ingredients it requires, but Carla walked through process in a comprehensive and hands-on way. We prepared, made, and ate in her home. All while speaking Spanish the entire time and occasionally English when I forgot how to say certain words in Spanish. I would definitely recommend this experience. Carla is creative, knowledgeable, nice, and has one delicious recipe she learned to make in Oaxaca! Gracias Carla ✨
