While adapting to this new normal, it has become essential for all us to balance our work, chores for the household, cook and look after our families. Unsure of how you can feed your family simple yet wholesome meals when ingredients are hard to find. Then you have come to the right place. Join me on a culinary journey, where I take you through some simple techniques for easy to cook, one pot meals with focus on zero wastage – a concept which is all the more relevant in the current scenario. Together we will get our creative juices flowing and produce some stunning yet simple dishes without compromising on taste or health.

I will share some tips and tricks for minimalistic cooking and how one can use various parts of the ingredient in different ways. Something which you thought was not possible right! I will also chat about some of the concepts which are close to my heart like energy efficiency cooking and no-fermentation pickling while walking you through one of my signature dishes - Ghee rice and one pot kerala stew in 25 mins – perfect for beginners who wish to learn as well.

I am a Goa-based culinary expert with over a decade’s experience. I have successfully built a reputation for introducing a new genre of modern coastal cuisine in India, under my brand name Esca Brahma, which includes two restaurants - Mahe in Goa and Curry Tales in Mumbai. My expertise also lies in creating unique dining experiences, and amongst my most popular ones are those where traditional coastal food is combined with Ayurvedic and Yin-Yang principles.

The workshops with Sandeep was so well curated and interactive. We learnt some great tips and easy kitchen tricks to start introducing a zero-waste kitchen policy in our lives and that was brilliant. It's a great workshop for someone that's curious about the space and interested in learning some easy quick recipes.

Beauty lies in simplicity- that sums up the experience with Sandeep. I cook every day, but this experience felt more like catching up and spending time with Sandeep and was a lovely reminder to keep things simple and minimalistic.
