What you'll do
Starting with the very basic ingredients, we’ll begin with making coconut oil. Have you opened a coconut before? We’ll grate the coconut by hand and make the oil traditionally, preparing it over a fire. While that’s happening we’ll harvest our starch, depending on what’s in season, and get to work making it into a flour we can use for tortillas. Which vegetables will we have? We’ll see what’s in the garden and forest fringes: perhaps there’s wild mushrooms, exotic roots or something delicious and familiar. Salad greens can be picked by hand along with some herbs and edible flowers. We’ll roast and grind some cacao for our drink, perhaps gather some fruit for a juice. Someone will fetch eggs from the ducks or chickens. Our oil should be ready to use and we’ll hand make our tortillas and begin to cook our veggies and eggs. Will there be desert? Yes, of course! Finally we will sit down together to eat this feast prepared entirely from scratch. Oh, did we forget the salt and black pepper? We’ll need to make and harvest those too! As modern, western people we have mostly lost touch with our food and where it comes from. In this experience I wish to share the fun and satisfaction we can experience when we really do feed ourselves. I hope you join me for some delicious, and well earned, lunch!

Where you'll be
We’ll be on our farm just outside the laid back community of Puerto Viejo. Our farm is mostly forest as we are an established agroforestry permaculture project. The place where we’ll make lunch is our garden and kitchen. The forest is very close by and gives great opportunity for foraging. We use our kitchen for chocolate making and workshops, it’s a comfortable and lovely place to enjoy good conversation and food.
