I am a cooking chef who has worked for more than 20 years in restaurants in Italy, London, Brazil and other locations around the world.
My cuisine is based on creativity and the use of local products and ancient peasant recipes, which I like to research in books and traditions of the area where I live. Mine is a cuisine that blends anthropology (which is my degree) and gastronomy.
The Valsusino area where I live is rich in ancient culinary traditions.

The dinner experience with Fernando as chef in the tower house was extraordinary! He is a warm human being, very detailed oriented. He included me in the preparation of the food, as we were talking and getting to know each other. I learnt a lot about his subjects of studies in gender diversity. Also, when I first entered the house it felt magic. Their home was built in an original medieval tower transformed into a house. The entire atmosphere was magical and felt very ancient Italian. The food was just perfect. I'm a vegetarian so I enjoyed everything. The dish is mainly vegetables dipped in the Bagna Cauda sauce, which is marvelous and literally transforms the taste. For someone seeking to experience a truly ancient Italy way I would definitely recommend this experience. I also spend the night in their house, they have a airbnb room, I left for hiking in the next morning.
